School has started & Brock turned 7!

This will be the first full week of school for my boys. They started last Thursday. I now have a Kindergartener and a First Grader. Where does the time go? Wow! Those 7 years of being a stay at home Mom and a Photographer full time went really fast. Hard to believe this time is already here. Both of my boys had great first days of school and were super excited to go back today.

We spent this whole weekend celebrating my oldest Brock turning 7! Lots of family time and fun was had. In the blink of an eye. wow! I still can’t believe he is 7.

August 17th – Birthday morning!

Grandpa Chevy & Grandma Chris had a little birthday celebration at their home Friday night. Fish fry & atomic chocolate cake!

Saturday night – Manley Bar dinner out! Brock wanted his favorite chicken strips so we road tripped (gravel roads) to Manley. Family car #selfie

Sunday – family birthday party at our home! Lots of fun with cousins!

    Ryleigh – Millard North Senior {Old Market, Omaha, NE}

    I had a super fun time with Ryleigh and her family strolling through the Old Market finding fun places to take some senior pictures for her. Always love the Old Market for seniors because you can get such a variety of photos – brick, alleys, stairs, garage doors and green grass/parks/water all in the same area. It’s a lot of walking, but super worth it. Loved every second with you all! Thank you! Good Luck with your senior year, Ryleigh! xo

      A stroll through Elkhorn, NE {Vergil Family Mini Session}

      Always love seeing my families that come to me every year and how much their kids have grown and how their family has grown. So much fun was had with the Vergil family.         National Chocolate Chip Cookie Day {Chocolate Chip Pudding Cookies}

        Happy National Chocolate Chip Cookie Day!

        Who doesn’t love chocolate chip cookies?! These are my families favorite. My kids ask for these all of the time. They say “can you make the soft pudding chocolate chip cookies?” Yes, pudding in the mix makes them super soft and gooey. Super easy to make too!

        Baking has been a huge part of my life and I love it! I just need to find some healthier versions now since I am doing Keto.  Anyone have any awesome Keto chocolate chip cookie recipes, send them my way!

        Here’s the recipe! Betcha can’t just have one! Enjoy!

        • 1 cup butter, softened

        • 3/4 cup brown sugar

        • 1/4 cup granulated white sugar

        • 1 small package (3.4 oz) instant vanilla pudding mix

        • 2 large eggs

        • 1 tsp vanilla extract

        • 2 1/4 cups all-purpose flour

        • 1 tsp baking soda

        • 1 (11 oz) package milk chocolate chips

        Preheat oven to 375 degrees. In a large bowl, mix together the butter, both sugars, pudding mix, eggs and vanilla. Beat with a hand mixer until creamy and combined. Gradually add in the flour and baking soda to the mixture. Beating on low speed until just combined. Stir in the chocolate chips. Drop batter by tablespoon on un-greased cookie sheets. Bake for only 8-10 minutes. (they may not seem fully baked, but they are. Do not over bake!) Remove from oven and let cookies rest and cool on the cookie sheets. No need to transfer to wire racks.

          Bacon Ranch Chicken Salad {Summertime Meals}

          Summertime is starting to drift away…yes, it’s August and school starts in 2 weeks and my boys have started flag football already. Crazy, I know!

          I’m always searching for Summer recipes because I don’t have many and I always love sharing them with all of you. If you are like me, I am always looking for new meals that are healthy and that my kids will enjoy as well. Well, we have a winner – the Bacon Ranch Chicken Salad is AMAZING and will be added to our recipe box! Super easy and super good! I hope you enjoy it as much as we all did! xo

          I couldn’t resist this recipe I found from Living With Landyn.

          PREP TIME: 10 Minutes/ COOK TIME: 10 Minutes/ YIELD: 3 Servings

          *5 slices of bacon (I used microwave Turkey Bacon because it’s all we eat)

          *1 1/2 cups cubed cooked chicken (about 12 oz.)

          *1/3 cup mayonnaise

          *3 tablespoons ranch dressing

          *1/2 stalk celery. chopped (optional) – I did not use celery.

          *Salt & Pepper

          *6 butter lettuce leaves for serving (we used shredded bagged lettuce because it’s all we had)

          *Chopped fresh parsley for garnish (optional)

          Notes: You can use precooked rotisserie chicken. If you prefer, you can spoon this chicken salad into avocado halves instead of lettuce leaves. To make this kid friendly, I just made them sandwiches using buns with a side of potato chips. They both loved it!

          1. In a skillet over medium heat, fry the bacon until crispy. Set aside on a paper towel-lined plate to cool.
          2. Place the cooked chicken in a medium-sized mixing bowl. Add the mayo, ranch dressing, and celery.
          3. Chop the bacon and add to the chicken mixture. Fold all the ingredients with a spoon until the chicken is evenly coated. Season with salt and pepper to taste.
          4. Divide the chicken salad evenly among the lettuce leaves. Garnish with chopped parsley, if desired.

          CALORIES: 397 / FAT: 35.3g / PROTEIN: 18g / TOTAL CARBS: 1.3g / NET CARBS: 1g
